As much as we'd love to, who has the time to cook bacon and eggs every morning? Check out this super-quick recipe for on-the-go omelets that I work into my food prep each week. Pop them in the microwave for 30 seconds in the morning and it's like a freshly cooked hot breakfast!
Prep time: 5 minutes
Cook time: 10-15 minutes
Ingredients:
1. 6 whole eggs
2. 1.5 cup egg whites (out of a carton is fine)
3. Bacon (half of a 1lb package works well), sausage, veggies or toppings of your choosing
Prep:
1. Spray a 12 count muffin tin with nonstick spray
2. Preheat oven to 350 degrees
3. Fully cook bacon, sausage, or any other meat you may be putting in your omelets
4. Mix eggs, egg whites, and toppings in a large bowl
5. Fill muffin cups 3/4 full and place pan in oven
6. Bake at 350 for 10-15 minutes or until eggs are no longer runny in the middle
